The chain currently has about 400 stores globally, and about 60 in the United States. Shakey's Pizza was founded in Sacramento, California, on April 30, 1954, by Sherwood "Shakey" Johnson and Ed Plummer. Johnson's nickname resulted from nerve damage following a bout of malaria suffered during World War II. The parlor opened on the first weekend, but since the pizza ovens were not yet completed, only beer was served and Shakey took the profits from beer sales and bought ingredients for pizza the following Monday. Shakey personally played dixieland jazz piano to entertain patrons. Shakey's initially became known outside Sacramento, not for its pizza, but for the jazz program it sponsored on a regional radio network. Shakey Johnson is honored in the Banjo Hall of Fame in Guthrie, Oklahoma, for his longtime use of banjo music at his pizza parlors. Other live music, including piano, was also a staple in the old Shakey's parlors.

It is organized and put on by the Sacramento Traditional Jazz Society, usually sponsored by Raley's and Bel-Air supermarkets, and features some of the most noted jazz musicians in the world. The 35th annual Jazz Jubilee was held in 2008. The jubilee is touted as the worlds second largest jazz festival and the largest in the US. The diversity of this festival regularly brings thousands of people from all over the world. It presents a lot of traditional jazz, but also swing, blues, zydeco, barbershop, ragtime and mainstream jazz, along with a number of specialty acts.

He measures 7'2" and played center. Throughout most of his college and professional career he wore the uniform number 00. After graduating from Duncanville High School, Ostertag played college basketball for the University of Kansas from 1991 through 1995, playing in two Final Fours, and swatting 258 career shot blocks during that time, a record for both Kansas and the Big Eight Conference. He was drafted by the Utah Jazz in the first round in 1995. He spent the next nine seasons playing for the Jazz, playing alongside superstars John Stockton and Karl Malone, before signing as a free agent with the Sacramento Kings in 2004. His season with the Kings was unproductive as he had little playing time. Later in his career, on August 2, 2005, Ostertag was involved in a 5-team, 13-player trade that sent him back to the Jazz
